Vegetable Bouillon

The vegetable broth that we are going to prepare at Naturocenter will serve as the basis for countless new dishes. This vegetable broth is going to serve as a base for recipes such as vegetable creams, rice dishes, fish… An infinite number of recipes.

With a good vegetable broth we will have a base to prepare healthy, light and easy to prepare recipes. Undoubtedly an essential preparation and a fundamental pillar for a balanced diet. Let´s cook the broth!

 

We will need:

  • A quarter of a kilo of mushrooms
  • An Italian green pepper
  • A leek
  • A clove of garlic
  • Half a white onion
  • A couple of carrots
  • A couple of sprigs of celery
  • A tomato
  • A turnip
  • A few sprigs of parsley
  • A few peppercorns
  • A small bay leaf
  • Salt 
  • Extra virgin olive oil
  • One to two litres of water (depending on the desired concentration level)

 

Preparation:

First, we fry (in a well-sized pot) the onion cut into cubes and the well-chopped garlic until it is about to turn brown.

Then add the Italian green pepper, well cleaned and cut into small squares, the leek cut into thin slices, the carrots cut into cubes, the well-chopped celery and some parsley leaves. Fry everything until it starts to turn brown and then add the mushrooms cut into quarters.

Once everything is golden brown, add the well-crushed chopped tomato and leave it for about five more minutes.

Once this is done, add the water along with the turnip, bay leaf and peppercorns. Add the salt, place it on the fire until it starts to boil.

Once everything begins to boil, maintain the heat for 50 minutes or an hour in the uncovered pot.

After this, we strain the vegetable broth and taste it to assess its salt content (although it is recommended not to prepare it too salty). We have prepared our vegetable broth in this easy manner. Let’s enjoy it!
