We will need:
- Peppers of different colours
- A handful of cherry tomatoes
- A small carrot
- A couple of handfuls of lentils
- A dash of lemon juice
- Lentil sprout (optional)
- Parmigiano Reggiano slices (also optional)
- Extra virgin olive oil
- Salt
Preparation:
First of all we need to cook the lentils by boiling them in a bowl of water until they become tender and soft. Once the lentils are ready, remove them from the water, drain them and leave them on a plate until they are completely cold.
Once the lentils are prepared, it is time to cut the vegetables. Cut the pepper into very small cubes and leave the cherry tomato in halves. Additionally, we will grate the carrot as thin as possible.
When all the vegetables are ready and the lentils are cold, mix them well and add the lemon juice, olive oil and salt. We taste them and adjust the flavour if necessary.
