Poke is a dish that comes to us from Hawaii and that during the last few years has caused a gastronomic fervour in the United States. This mixture of rice, seaweed and fish really produces a delicious, nutrient-laden dish.
Rich in good fats (avocado or salmon), vitamin D and calcium (plus other nutrients). This dish is a really complete option and much cheaper than sushi and, additionally, we can make it at home as it does not require any sophisticated technique, only raw material of the best quality.
We will need:
- 400 grams of boiled brown rice
- 350 grams of salmon or tuna (or both together)
- A good-sized avocado
- A handful of nuts
- A small red onion
- A jalapeño chili
- A couple of sprigs of cilantro
- Three tablespoons of sesame
- Four tablespoons of soy sauce
- Three tablespoons of sesame oil
- A pinch of chili powder
- A handful of kombu seaweed
- A nori seaweed leaf
- A pair of limes
- Salt
Preparation:
We start by cutting our red onion into very thin strips and leaving them in the bowl with the lime for a while in the fridge. This way, we obtain a seasoned onion that will be dyed all pink and will acquire a delicious taste.
We produce the sauce by mixing soy sauce, sesame oil, toasted sesame, seasoned onion and half a jalapeño and adding it all together very well.
Next, cut the avocado into cubes, the other half of the jalapeño into slices and our kombu and nori algae, to an adequate size.
Simultaneously, we marinate the fish for a couple of minutes in our sauce and divide the rice into several containers which we have on hand.
Once everything is ready, add the marinated fish and our seasoned red onion to the rice and top it up with the diced avocado, chopped walnuts, jalapeño, seaweed and cilantro, also well-chopped. All you have to do now is to enjoy this wonderful poke.
